The word "protein" comes from a Greek word which means "of first importance". Why? Seventy-five percent of the body's tissues are made from it. Protein breaks down in the stomach into amino acids which are later recombined in different ways to form muscles, organs, enzymes, antibodies and hormones. The quality of a protein is measured by its PER or Protein Efficiency Ratio. This ratio shows the balance between the eight essential amino acids (those which the body cannot manufacture but must get from food). Soy protein has a very high PER when mixed with milk (about 100) but has on its own only a PER of about 80. This is because it does not contain enough of the amino acid methionine. When methionine is added to soy protein, its PER increases to almost 100 and it then becomes a complete high-quality protein even when mixed with juice.
